My First Attempt at Meal Planning

If you ask me what I want for dinner, I don't usually have an answer. It's probably a better strategy to ask what I don't want and narrow the options from there.

Every night after work it's the same conversation between Graham and me.

Graham: "What do you want to eat?"

Me: "I don't know. What do you want to eat?"

Graham: "I don't care." (Or he'll suggest something and I'll veto it.)

Many of the bloggers I follow regularly meal plan, and I've always wanted to try it. If it can make weeknights (and grocery shopping) easier, I am all for it. My style of cooking is finding easy recipes on Pinterest and then making them even easier by using store-bought sauces whenever possible. (Yes, I know they are easy to make. But I want dinner done as soon as possible.)

So, with no further ado, here's my first week of meals:

Saturday: Slow cooker lentil chili from Two Peas and their Pod. The chili tasted great, and I had it for lunch for the following three days. (I should have made less, because the recipe serves 8-10 people.)

Sunday: Fettucine alfredo. (With sauce from a jar — let's not get crazy.)

Monday: Girls night out happy hour. (I had the Veg sandwich from Main Ingredient.)

Tuesday: Eggplant Parmesan. I call it Eggplant Parm but it's actually just sliced eggplants covered in pasta sauce and cheese. Sometimes I layer it with ready to bake lasagna sheets. A similar recipe is Martha Stewart's Baked Eggplant Parmesan.

Wednesday: Slow-cooker mashed potatoes from Creme de la Crumb, baked fish and veggies. The mashed potato recipe is now a weekday regular in the Flora home. It's easy to throw it in the slow cooker during my lunch break and have it ready to go after work.

Thursday: Stacked enchiladas with roasted veggies from Two Peas and their Pod. This recipe was my favorite of the week. It was incredibly easy and fulfilled my craving for Mexican food.

Friday:  Leftovers. I had planned to make this Easy Chipotle burrito bowl recipe from Damn Delicious, but I will save that for another day. 

I'm eager to try meal planning more regularly to make weeknights flow more smoothly while I juggle running, yoga and spending time with my husband. Got any recipes to share?
